Super-simple, quick & healthy lunch!

I’m sure we’ve all been incredibly busy with work, studies or any other duties that have had us pressed for time. It does not, however, mean that we do not have time for a healthy, home-prepped lunch or snack. You could easily put something together in less than 10min! Here’s an option for you to try next time.

What you need:

__ 1 slice of bread of your choice (I love rye bread or sourdough)
__ Coconut oil (for spreading on the toast)
__ 1/2 ripe avocado
__ 3-4 cherry tomatoes
__ 2 slices smoked salmon
__ 1 egg
__ salt & pepper to taste

Method:

– Fill a saucepan around 3 inches deep with water. When it comes to boil, reduce it to simmer. Poach the egg in simmering water for 3 min for a runny yolk.
– In the meantime toast the bread, spread with coconut oil, top with sliced avocado, sliced tomatoes & smoked salmon.
– Once 3min have gone by on the timer, fish out the egg with a slotted spoon to drain all the water. Then place it on top of the toast, add some himalayan pink salt & pepper and you’re done! 🙂
